Homemade Cheese Scones from The Castle Hotel, Bishop’s Castle


  • 8 oz self raising flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 oz butter
  • 1/4 pint milk
  • 2 oz grated cheese
  • 1/2 teaspoon mustard powder


  1. Mix together the flour, salt, baking powder and mustard
  2. Rub in butter
  3. Stir in grated cheese
  4. Make a well in the centre of the mixture and add milk, bring together with a fork
  5. When the mix comes together turn onto a floured surface, kneed very lightly and pat out to about 1/2 inch thick
  6. Cut with a cutter
  7. Place on floured baking sheet
  8. Brush top with a little milk if you prefer
  9. bake at 220c for 8-10 minutes
