Saturday 27th January is officially National Chocolate Cake Day! With this tremendous occasion in mind, we’ve got another fantastic recipe for you, this time from those talented folk over at The Victoria Inn at Holkham.

Direct from their kitchen, celebrate National Chocolate Cake Day by having a go at recreating their delicious flourless chocolate tart! With this particular recipe serving 12, invite friends, family and work colleagues to indulge in all things rich and luxurious this January.

Ingredients (Serves 12)

  • 400g butter
  • 400g dark chocolate
  • ¼ tsp vanilla powder
  • 10 eggs separated
  • 300g sugar
  • 200g ground almonds
  • 100g cocoa


  • Pre-heat oven to 160°C
  • Melt chocolate and butter together and stir in vanilla powder.
  • Beat egg yolks with 100g sugar until pale in colour and then pour into the chocolate mix.
  • Fold in the almonds and cocoa.
  • Whisk egg whites until stiff and then gradually add in the sugar.
  • Fold 1/3 of the egg whites into the mix and then gently fold in the rest of the egg whites.
  • Pour into a 10inch/25cm lined cake tin and spread the mixture evenly in the tin.
  • Bake for 30 – 35 minutes then check. The consistency should resemble a brownie texture with a ‘slight wobble’.
  • Serve with a quenelle of clotted cream and mixed berries.
